I think I've discovered the reason for random doubleclicks

If the pointer moves after clicking and is still on the same item when the button is released, it produces a doublelick

I can replicate the behavior you're describing with item movement. Is there any other part of the game where it also occurs, or just with item movement?

upon testing, it seems to be the cause of the notorious drag-into-church while placing trophies on beast altar!

I've been doing this for years and always assumed it was normal and intentional.

It's intentional to be able to down click, drag, upclick to release. It's not intentional for the upclick to produce an action other than a release of the original down click, i.e. picking up the rest of stack, entering church, etc.
